Mini Snowman Cupcakes

For the mini cupcakes:

60 g unsalted butter , softened , softened
80 g caster sugar
1 large egg
100 g plain flour
10 g corn flour
1 ½ tsp baking powder
¼ cup milk
1 tsp Queen Vanilla Bean Paste

For the decoration:

1 packet Dr. Oetker Ready Rolled Icing White
Dr. Oetker Designer Icing Chocolate Flavour
Queen Food Colour Gel Red
Queen Food Colour Gel Green

Method

Preheat oven to 190°C. Line a mini cupcake tin with 24 cupcake cases. In a mixing bowl, beat butter and sugar until pale and creamy in texture. Gradually whisk in egg, then sift flours and Baking Powder on top and mix until well combined. Add milk and Vanilla Bean Paste and mix until combined. Spoon mixture into cupcake cases and bake for 16-18 minutes until risen and firm to the touch. Transfer to a wire rack to cool.

Warm up Icing Disc with your hands before unrolling, then cut 24 circles to fit the top of cupcakes.

Use Designer Icing Chocolate Flavour to help fondant stick to tops of cupcakes.

Colour a small amount of the remaining Icing Disc with a few drops Green Food Colour Gel and colour the rest with a few drops Red Food Colour Gel.

With the coloured fondant, form little hats, gloves, scarves and headphones and attach to snowmen.

Paint eyes and buttons with Chocolate Designer Icing. Use a toothpick to scratch a little mouth. Enjoy your little snowmen!
